Belgian Fries:
If you want to make fries at home, like Belgian grandmothers did, try this:
Peel and cut potatoes into even strips. Soak potatoes in cold water for 1 hour. Fry in deep fat at 325° for 5 minutes. Drain. Increase heat to 375° and fry until Belgian fries are crisp and nicely browned. Drain on kitchen paper towel and serve hot. For the best taste in the US, use Yukon potatoes.
Chocolate Recipes:
Chocolate Mousse: 150 grams dark chocolate 150 grams fresh cream 2 eggs
Bring the cream to a boil. Add the chocolate, in small pieces. Whisk for about 3 minutes. Add the egg yolks. Whip the whites until firm and add them to the mixture. Chill and serve.
Chocolate Truffles: 200 grams butter 400 grams hazelnut spread 250 grams dark chocolate
Soften the butter, add the softened hazelnut spread and then the chocolate, warmed to 35º, Mold into balls of the required size. Put into the refrigerator. After chilling, dip into melted chocolate, then roll in cocoa or powdered chocolate.
Brussels Waffle:
10 tablespoons butter ½ teaspoon salt 1 tablespoon salad oil 1 tablespoon vanilla flavoring 2 cups milk 2 cups water 1 ounce fresh yeast or 1½ envelopes granulated yeast 4 cups sifted flour 4 eggs, separated ½ cup sugar
Heat ½ cup of the water to lukewarm. Dissolve the yeast in the water. Put the flour into a large bowl. Stir in the egg yolks, the sugar, and the yeast. Beat in the remaining water, the milk, the butter, salt, salad oil, and vanilla. Beat until the mixture is smooth. Beat the egg whites until they stand in stiff peaks. Fold them into the batter. Let the batter stand for 1 hour, stirring it 4 times. Bake the waffles in a waffle iron as usual. Serve with whipped cream, fruit, jam or sugar. Send us one!
Liege Waffle:
INGREDIENTS
Makes 8 Liège Waffles
- 1 (1/2 ounce) package yeast
- 2/3 cup lukewarm water
- 3 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 4 cups flour
- 6 eggs
- 2 cups softened butter
- 2 cups pearl sugar
DIRECTIONS
- Mix yeast, water, sugar, salt and cinnamon, and let develop for 15 minutes.
- Place flour into a large bowl.
- Make a well, pour in yeast mixture, and begin to knead.
- Continue to knead, add eggs, one at a time, and add soft butter, 2 tablespoons at a time, mixing well.
- Let dough rise in bowl until doubled.
- Gently mix in pearl sugar.
- Let rest for 15 minutes.
- Heat waffle iron.
- When hot, butter waffle iron, then pour in 3 tablespoons dough per waffle.
10. Cook for 3-5 minutes, until waffles lightly brown on top.
11. Serve warm or room temperature. |
